raw “cookie dough”
Okay… reality check. Do these taste like actual cookie dough? Sort of. You think I’d lie to you??
But it IS reminiscent enough for me to call it that - AND know that it’s a great option if you’re in the mood for something a little sweet but you’re also hungry and therefore need something with staying power.
These pack a punch with healthy fats + protein from the cashews and coconut, carbs and fiber from the oats, and yum factor from everything else.
INGREDIENTS
3/4 cup cashews
1/3 cup oats
1/4 cup shredded coconut
2 Tbsp maple syrup
1 tsp vanilla
Cinnamon
Sprinkle malden sea salt
INSTRUCTIONS
blend cashews + oats in a food processer or blender until they’re a fine powder
(be careful not to over blend or the heat from processing will create more of a nut butter that’s difficult to mold)
add the remaining ingredients and blend in short bursts to combine, scraping the sides as needed
form into roughly even balls (who cares??) and chill in the fridge or freezer before serving.
store in the fridge and enjoy!
