butternut squash soup

I’ve experimented quite a bit with different variations of this soup and realized that many of them have the same base. This is a simple, easy version that’s a great place to start and allows room for experimentation based on your tastes and preferences.


Ingredients

  • 𝗕𝘂𝘁𝘁𝗲𝗿𝗻𝘂𝘁 𝘀𝗾𝘂𝗮𝘀𝗵 (to save time, get it already prepped- whether that’s halved or cubed)

  • 𝗟𝗶𝗾𝘂𝗶𝗱 𝗯𝗮𝘀𝗲 (chicken/veg broth or stock, for a creamier option use coconut milk)

  • 𝗔𝗽𝗽𝗹𝗲𝘀 (i’ll often go for green and peel them - but a sweeter apple is also delicious)

  • 𝗖𝗲𝗹𝗲𝗿𝘆

  • 𝗢𝗻𝗶𝗼𝗻𝘀 or shallots


Instructions

  1. Chop all ingredients and throw into the crock pot

  2. Add spices to taste (I like salt, pepper, and a hint of cinnamon)

  3. Cook on high for 4 hours, low for ~6-8, or until vegetables feel tender and ready to blend

  4. Use a handheld immersion blender to create a puree, adding more liquid or spices if you need - can also use a blender or food processer
