“salty + sweet” baked sweet potatoes
I looove sweet potatoes so much. As a bonus, this recipe is a crowd-pleaser with the kids. Consistent with my cooking philosophy, this side dish comes together with minimal effort and minimal ingredients - yet tastes fantastic.
INGREDIENTS:
2-3 sweet potatoes, peeled and chopped (this is enough for two adults and a little one, use more for a bigger crowd!)
coconut oil, melted
salt
cinnamon
drizzle of maple syrup (optional)
STEPS:
preheat oven to 410 degrees and line a baking sheet with parchment paper
melt a big spoonful of coconut oil in a microwave safe dish (you can always pour back what you don’t use)
spread the diced sweet potatoes onto the pan and toss with coconut oil directly on the baking sheet
sprinkle with salt and cinnamon, toss again lightly
bake for ~30 minutes or until potatoes are soft and slightly browned
for an optional sweetness boost, drizzle with a small amount of maple syrup when the potatoes come hot out of the oven (you don’t need much to enhance the flavor - the coconut oil and cinnamon also help bring out the sweetness)
