blender pancakes
a morning favorite in our home, these yummy pancakes are made with simple ingredients and come out great every time. It’s likely you already have everything you need on hand, which makes cooking even easier!
INGREDIENTS:
one ripe banana
1 egg
1/4 cup of oats or flour
(add a little milk for thinner consistency)
pinch of cinnamon and salt
butter or coconut oil for greasing pan
STEPS:
turn the pan on low heat, add butter or coconut oil
add banana, egg, oats, cinnamon, and salt to blender, and blend until smooth
add small splashes of milk if you prefer a thinner consistency - thickness should be similar to a traditional pancake mix
pour pancake-sized dollops into the pan and cook on one side until you see air bubbles form, then flip
note: these pancakes are more fragile than a mix due to the fresh ingredients, so you’ll need to cook “low and slow” on these to prevent burning. they are worth the patience I promise!
