easy rotisserie chicken soup

As the weather cools down, nothing warms you up quite like a cozy bowl of chicken soup.

This recipe, using rotisserie chicken for convenience, is packed with hearty vegetables and nourishing bone broth—making it the perfect comfort meal for chilly fall or winter days.

It comes together quickly, but delivers that slow-simmered, homemade flavor we all crave this time of year.

INGREDIENTS:

  • 4-5 large 𝗰𝗮𝗿𝗿𝗼𝘁𝘀, chopped

  • 4-5 𝗰𝗲𝗹𝗲𝗿𝘆 stalks, chopped

  • 1 𝗼𝗻𝗶𝗼𝗻, diced

  • 1-2 TBSP 𝗯𝘂𝘁𝘁𝗲𝗿

  • 3 𝗯𝗮𝘆 𝗹𝗲𝗮𝘃𝗲𝘀

  • 𝗦𝗮𝗹𝘁 & 𝗽𝗲𝗽𝗽𝗲𝗿 to taste

  • 6 cups of 𝗹𝗶𝗾𝘂𝗶𝗱 (I used 4 cups chicken bone broth and 2 cups chicken broth)

  • 1 TBSP 𝗹𝗲𝗺𝗼𝗻 𝗷𝘂𝗶𝗰𝗲

  • Splash of 𝗰𝗿𝗲𝗮𝗺 or 𝘄𝗵𝗼𝗹𝗲 𝗺𝗶𝗹𝗸 (optional)

  • Meat from an entire 𝗿𝗼𝘁𝗶𝘀𝘀𝗲𝗿𝗶𝗲 𝗰𝗵𝗶𝗰𝗸𝗲𝗻

STEPS:

  1. Heat a large pot over medium/high heat.

  2. Add butter and vegetables.

  3. Sauté until vegetables begin to brown and start to get soft.

  4. Add liquid, spices, and bay leaves.

  5. Bring to a boil, then simmer for 10 minutes (or until vegetables are soft to your liking)

  6. Stir in lemon juice and dash of cream/milk, then add rotisserie chicken.

  7. Add additional spices or liquid to taste. Remove the bay leaves before serving.
