nana’s one minute egg

this simple recipe was a staple in my home growing up, so it’s named for my mom “Nana.” it’s as easy as it gets to prepare, and a great way to get some protein and fat into your kiddos before sending them off to school - or for your own quick breakfast or desperation dinner :-) mom needs to eat, too!

INGREDIENTS:

  • 1 egg

  • 1 piece of bread

  • butter

  • salt + pepper

STEPS:

  1. crack egg into a ramekin or small bowl

  2. tear bread into small pieces and mix into the egg and add salt + pepper

  3. cover dish with a paper towel and microwave for 60 seconds

  4. stir in a generous dollop of butter, stir, and add any additional spices desired
